Truth be told, asparagus wasn’t exactly my go-to vegetable until I stumbled upon this recipe. For years, I’d tried different ways of preparing it, but nothing seemed to click—until now. This dish is incredibly easy to put together, yet it manages to enhance the natural flavor of the asparagus without overpowering it. It’s versatile too—it pairs beautifully with almost any main course!

To start, grab yourself a fresh bunch of asparagus and rinse it thoroughly under cold water. Trim the woody ends by either snapping them off individually or cutting them evenly with a knife. A trick I recently learned? Break one stalk first to find the “snap point”—apparently, that’s where the tender part begins. While I’m not entirely sure if it’s scientifically accurate, it works well enough for me!

Once all the ends are trimmed, arrange the spears neatly on a baking sheet. Drizzle generously with olive oil, then sprinkle with a pinch of sea salt to bring out their flavor.

Next, top it off with a generous layer of grated Parmesan cheese. I usually opt for the flaky kind over the powdered stuff, though I plan to experiment with freshly grated Parmesan next time around. Once everything’s in place, slide the pan into your preheated oven at 350°F and let it bake for about 15 minutes.

When it’s done, you’ll be rewarded with perfectly roasted asparagus that’s crispy on the outside and tender within. The combination of the salty Parmesan and earthy asparagus creates something truly special. I paired mine with a juicy steak and creamy mashed potatoes, and it was pure perfection!
